Been really inspired tonight watching this programme on BBC4 (thanks to Gilly for noticing it) – “The Perfect Loaf” follows one baker’s attempt at creating a new loaf to win a bread competition – and he ends up making a spelt, sea salt and spring water loaf leavened with a wholewheat sour-dough – he doesn’t win – sorry I have just spoiled the plot, but it’s not about that, his passion for bread and good quality local ingredients resonate strongly with my ideals – his only advantage is that he has a family baking business, a bakery and a wood fired oven…
Having said that I have managed to get a decent multi-grain struan and a couple of power loaves out this week even in our rather basic kitchen, and the Italian white has been very well received too.
Getting consistent good quality bread is my target at the moment – working through Peter Reinhart’s Whole Grain book is helping and this programme has spurred me on. There are some devine looking cheese toasties in the video too – worth a try I think, maybe this month’s cheese allowance can be used this way. It’s a good way of selling on bread at a premium too – hmmm.
